Ante is modelled after the Japanese concept of jazzu kissa – a jazz bar where the music is as important as the drinks. The focus is on sake, with more than 60 on the list – start with a tailored flight of three to discover what you like. Chef Jemma Whiteman (ex-Pinbone, Lankan Filling Station and Billy Kwong) has created a global menu with clear Japanese influences. Dishes like tagliatelle with fermented shitake mushrooms or beef brisket with turnips, prune and yuzu are designed to pair perfectly with sake.
