Opened in Martin Place, Mercado is a Spanish and Moorish restaurant from the brains behind China Lane and China Doll. Ex-Nomad chef Nathan Sasi will lead the kitchen in a truly impressive take on nose-to-tail dining, where pigs and chickens will be skewered on the rotisserie and there'll be plenty of offal on the menu. Sasi is taking house-made goods to the next level, making everything down to milling the flour for the bread.
