Hidden behind a fridge door within a small deli in the laneways of Manly, The Cumberland is an underground speakeasy with a Spanish twist. The basement bar serves a selection of more than 250 whiskies, natural wine and craft beer. There’s also a fun themed cocktail menu offering prohibition classics, tipples inspired by original counties from Sydney and surrounds, as well as drinks made with ingredients foraged locally in Manly.

Food menus reveal an elevated deli-style offering with charcuterie, cheeseboards and tapas. Wednesday nights feature hot raclette melted and scraped onto new potatoes, cured meats and leg ham, and served with pickles, sourdough and crisps. The moody, 75-seat venue is decorated with antique furnishing, and is open Wednesday through Sunday.
