The Old Rabbit Bar & Dining

Nestled into a basement in Sydney CBD, Rabbit Hole has introduced molecular mixology with an innovative cocktail and shot list. Owned and run by Doug Laming, the venue strikes a balance between bar and kitchen with Doug's beverage enthusiasm paired with Chef Tomoyuki Usui's Modern French fine-dining cuisine. Rabbit Hole is also the only bar currently using Spherification (the culinary process of shaping a liquid into spheres, which visually and texturally resemble caviar) to produce Cointreau Caviar. A trip down a rabbit hole indeed.
