Overview
Sinclair's sits at the foot of the Blue Mountains and offers a taste of modern Australia on the Nepean River. It mixes cuisines and culinary influences, but channels a classic bistro on the plate: recipes are enriched with kombu, fermented chilli and beef fat, but they appear as pork chops, grilled prawns and roast potatoes. The restaurant is really proud of its sourcing: a map on the menu shows how ingredients generally come from within a 50km radius – the Sydney basin, the mountains and the Hawkesbury.
