Overview
The Sydney outpost of Pizza Studio Tamaki is founder Tsubasa Tamaki's largest in the world. At this CBD 78-seater, the menu features the Japanese-Neapolitan pies that made Tamaki's original Tokyo locations famous. There's the white-base Bismarck with pork sausage, pecorino romano, mushrooms and an egg cracked over the top; the chilli-flake-topped Diavola with pork sausage and olives; or Tamaki's eponymous pizza with smoky mozzarella and whole cherry tomatoes intended to be fork-crushed by diners to release the fruity sweetness. Each pie is bears Tamaki's signatures: a toss of Okinawan salt on the oven's base just before the dough hits the heat, and handful of cedar chips added to the fire at the end to imbue the crust with a unique smokiness.
