Located on the rooftop of Surry Hills' Ace Hotel, Kiln is a bar and restaurant known for pushing the boundaries of modern Australian cuisine.

There's nothing expected on ex-Noma chef Beau Clugston's menu. Imagine dishes like kangaroo tartare with blue mussel and nori giving it a briny edge; cannoli filled with chicken livers and Davidson's plum; and waffles served with bone marrow, salmon roe and bright wasabi leaf.

Native ingredients also make an appearance behind the bar, for example the tart Davidson's plum that's mixed with raspberry, pepper, bitters and rum for the Carnation cocktail. Skin-contact wines plus chilled reds, fuller whites and bubbles fill out the wine list, satisfying palates that go beyond the conventional drops.
