Winnie's is named after the first woman to perform at the Sydney Opera House: Winifred Atwell. She was born in Trinidad and in 1964 (nine years before the iconic landmark was finished), the musician donned a hard hat and performed Waltzing Matilda on her honky-tonk piano to Opera House construction workers.
