Palazzo Salato
Overview
Located in the heart of Sydney's CBD, Palazzo Salato is an ode to the great trattorias of Rome. Created to give Ragazzi regulars a place to linger longer, it's a little more grown up, a little more refined, with a lot more space. Spread over the heritage-listed building's walk-in bar, dining room and hidden private dining room, there's a lively space to suit every occasion, big and small.
To eat, Palazzo Salato's menu of snacks, hand-rolled pasta and sustainably sourced proteins from some of Australia's best farmers, is devised by Executive Chef Alex Major and Head Chef Matthew Goddard.
While seasonally led, a few classics remain on the menu always, including the Palazzo ham with colatura hot sauce and focaccia; stracciatella with anchovies; mafaldine with spanner crab, sea blight, uni butter and chilli; and the agnolotti dal plin to name a few. To drink, an 800-strong wine list focusing on Italian, Australian and French wines.
