Lean a little further over the balcony and you have pole position for watching the eager swimmers who lap up and down the iconic pool below. Don’t let them make you think twice about indulging at this restaurant – it’s the only way to dine at Icebergs. The philosophy here boldly states, “live love Bondi,” and it’s not hard to believe when you are sipping on a white peach Bellini in the stylish surrounds of the bar. Moving into the dining room, you’ll notice the decor highlights the hues of the sea but it’s the floor to ceiling sliding glass doors that give the best advantage of the stunning panorama.

Let the ocean spur inspiration and start with the tuna tartare with Tuscan dwarf peaches, kale, chives and basil or crab served with soft polenta, chilli, garlic and lemon. For mains, the cartoccio with sting ray, asparagus, shitake and wood ear mushrooms is steamed and served in a paper bag. Meat eaters will be delighted with the ironically leather-bound menu which is dedicated purely to the prime cuts that have been aged and graded specifically for Icebergs. Finish with the Italian meringue with lemon curd, sheep’s yoghurt, Chianti poached strawberries and gelato and I’m sure you’ll agree with the celebrities and gourmands that Icebergs is a spectacular culinary affair to remember.
