Christopher and Kathryn Bourke grow, make, bottle and bottle-age their Cabernet Sauvignon wine at Millthorpe. Called the Cabernet of Millthorpe it is the only wine that their vineyard makes. It is bottle-aged in their purpose-built cellar for eight to ten years before being released for sale.
