a'Mare means "by the sea" and that's exactly where their inspiration comes from. Their menu is a love letter to Italy's coastal regions, with fresh seafood, seasonal vegetables, and dishes designed to be shared.
Chef Alessandro Pavoni's cooking is a tribute to his Italian roots and the memories that shaped him. From handmade pastas to seafood specialities, every plate is a nod to tradition through an Australian lens that keeps things light, fresh, and full of flavour. And yes, some dishes are finished right at your table, just the way Nonna would've done it (if she had a flair for drama).
