Overview
Ammos is named after the word for 'sand' in Greek and you'll find the restaurant at The Brighton Hotel Sydney. The menu, developed in collaboration with Greek hospitality legend Peter Conistis, is based on the cooking of past generations. Think spanakopita, roast lamb shoulder and a classic dessert like bougatsa. You can also try a current version of Conistis' original scallop and taramasalata moussaka, a recipe he served at his innovative first restaurant Cosmos in the 1990s.
The venue combines a Greek Island-inspired aesthetic with sweeping views over Botany Bay. The elegant dining room is made for long, leisurely lunches, while the sun-drenched terrace allows you to savour drinks beneath crocheted umbrellas and palm trees. From the bar menu, expect Greek-inspired bites such as taramasalata, wagyu souvlaki and Sydney rock oysters. Pair them with an Ammos Spritz in the sunshine or go all Greek with an Ouzo Seasonal Highball.
