Overview
Shadow Baking is the bakery started by three of Gelato Messina's head chefs, and its Marrickville counter sits inside Messinaville, the Messina headquarters on Rich Street.
The pastry case changes often and is baked fresh each morning. Expect croissants, cookies, brioche and savoury bakes such as scotch eggs, alongside desserts that only a gelato company would dream up. Shadow Baking also creates exclusive gelato flavours with Messina, and the affogatos are made with Messina gelato.
The brunch menu brings Shadow-style Turkish eggs with chorizo and a hangover cure burger. Coffee, hot chocolate and affogatos round out the drinks.
There is air-conditioned seating inside and plenty of space around the Messinaville precinct to linger. Pastries are baked in limited numbers, so the counter closes once everything has sold out. Shadow Baking also caters for events and offices.
