Cook, author, presenter and MasterChef Australia contestant Hayden Quinn delves into Sydney’s incredible restaurants, rich culture and natural beauty for season four of Taste of Australia with Hayden Quinn — Sydney Edition. This week he scouts out the diverse flavours of Western Sydney.
“I’m in Western Sydney. But you probably wouldn’t guess it, with this beautiful backdrop. We are at Lake Parramatta, an oasis in Western Sydney.”
Hayden expresses his awe at the serenity of Lake Parramatta; just a stone’s throw away from the bustle of Western Sydney. Watch Hayden as he rows across the glassy freshwater in a classic wooden row boat with Declan White of Parramatta Row Boats.
“We should visit my favourite food shop. These are the main ingredients we need for the dipping sauce,” says Luisa Brimble.
Next up Hayden meets his good friend Luisa Brimble, lifestyle and food photographer. Hayden and Luisa gather ingredients to prepare for a Filipino feast at Mr Wong Filipino Oriental Store. They scour the shelves and select various vinegars, including coconut vinegar to make dipping sauce for the pork belly.
“Wow, that’s a serious bit of pork belly. This is my kind of cooking — not too fussy at all,” says Hayden.
Under the watchful eye of Western Sydney local chef Will Mahusay and owner of Sydney Cebu Lechon, Hayden helps prepare the pork belly for a Filipino feast, pressing garlic and salt into the flesh and wrapping it up with fresh shallots. A seasonal delight that will tantalize your taste buds!
