  • Quay, Circular Quay Peter Gilmore’s creations are almost too beautiful to eat, and feature edible flowers and rare miniature herbs. Much of Quay’s fresh produce is sourced from Peter’s own garden.
  • Pier, Rose Bay Chef Greg Doyle’s bread crusted Kingfish, piquillo pepper purée, preserved lemon and almond foam is intriguing. 
  • The Bentley Restaurant & Bar, Surry Hills Brent Savage’s funky tapas heads up a picturesque menu. Try white anchovy stick with pistachio praline, Kingfish ceviche with pickled watermelon and coriander. Sommelier Nick Hildebrandt will help select great NSW wines to match. 
  • Marque, Surry Hills Mark Best loves experimenting. Try his Japanese-inspired custard of pure crab liquor on dry ice or the extraordinary basil ice-cream.
  • Becasse, City Justin North’s vanilla bean brulee is a pretty concoction with summer berries and rose petals.
  • Adriano Zumbo, Balmain This rising star of the patisserie world has fun-filled offerings such as chocolate pudding with a syringe-full of raspberry crème anglaise or olive oil macaroons.
  • Foveaux Restaurant + Bar, Surry Hills Try Darrell Felstead’s twist on nachos with sour-cream ice-cream, heritage tomato and turtle bean salsa or blue-eye cod with red capsicum paint and black olive jelly.
  • Universal, Potts Point Christine Manfield is Sydney’s queen of desserts. Try the ‘sugar plum fairies’ made with over-salted brioche, sugar plums and basil-ice-cream.
